Easy Guacamole


Whether you are looking for a healthy snack or an addition to your taco night, guacamole is what you need! Avocados are superfoods and should wear little superhero capes because they are full of vitamins, potassium, healthy fats, and fiber! (Check out this article for more info on avocados) They are so creamy and add a little something extra. Growing up I was never a huge fan of avocados, but recently I made some really good guacamole with my sister and I thought it was really good! I'm learning to appreciate the different tastes of all natural foods, especially veggies (though avocados are fruits). God is so creative! He uniquely designed each vegetable and fruit to have a distinct flavor profile. It is so exciting to enjoy God's creation in so many different ways!


Easy Guacamole

Serves 1-2

Ingredients
1 ripe avocado
4-5 cherry tomatoes
Juice of 1/2 lime
Pinch of salt
Shake of Cumin

Directions
1. Cut avocado in half and remove pit. Squeeze avocado halves into a small bowl and discard the peels and pit.
2. Dice each cherry tomato and add to the bowl.
3. Squeeze lime half into the bowl.
4. Add a pinch of salt and shake cumin a few times (not too many).
5. Mash the ingredients together until desired consistency.
Serve with tortilla chips or tacos!

Secret tip!
Guacamole turns brown very quickly. While not rotten, it doesn't look appetizing to eat. To keep your guacamole from turning brown place lime half cut side down on top of guacamole, cover and refrigerate.
