Oven Roasted Asparagus
That is something I don't think I've ever said before I tried this recipe. Asparagus has never been at the top of my veggies list, probably because I've never made it to where I actually enjoyed eating it. I am really enjoying trying (and re-trying) new vegetables and exploring their flavor profiles. Asparagus really surprised me this time! I watched a video recently where a girl made a veggie scramble for breakfast with roasted asparagus and sweet potatoes. Her plate looked so delicious, so I thought I would try it out for myself! It was so good! I roasted the asparagus and sweet potatoes, cooked some spinach in a pan, and fried an egg in coconut oil. I highly recommend it! Oven Roasted Asparagus

Serves 2
Ingredients
1 bunch fresh asparagus
2 fresh garlic cloves, minced (fresh makes the difference)
Pinch of kosher salt
Coconut Oil, melted (appx. 2-3 tablespoons)
Directions
1. Preheat oven to 400F
2. Line baking sheet with parchment paper.
3. Snap off ends of asparagus and line them on the baking sheet.
4. Drizzle asparagus with melted coconut oil and add minced garlic and salt.
5. Toss with hands so that all the asparagus is evenly coated.
6. Bake for 12 minutes.
7. Serve with your favorite veggie scramble or as a side dish!
