Roasted Sweet Potatoes


I love roasted sweet potatoes! They remind me of summer and grilling out. I love the salty sweet combo with crispy edges and soft centers. They are a great way to add fiber, vitamins, and minerals to your diet...all while tasting delicious! With summertime quickly coming, I wanted to share my recipe for easy roasted sweet potatoes to help bump up your recipe arsenal. I hope you like this recipe as much as I do and enjoy it all summer long!

Roasted Sweet Potatoes

serves 6

Ingredients
3 medium sweet potatoes
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1 teaspoon Italian seasoning
1/2 ground pepper
2-3 tablespoons olive oil*

Directions
1. Preheat oven to 425F and line a baking sheet with nonstick foil to prevent sticking.
2. Peel sweet potatoes and cut lengthwise into thirds or fourths depending on the size of the potatoes.
3. Dice sliced potatoes into 1/2 inch cubes and place in a large bowl.
4. Add oil and spices and stir to combine until all potato cubes are coated.
5. Spread potato cubes onto the lined baking sheet evenly in a single layer.
6. Bake for about 30 minutes, turning the potatoes over every 10 minutes.
Optional: Broil potatoes for 2 minutes on low for a crispier edge.

Note:
Olive Oil- sometimes I use melted coconut oil or avocado oil instead
