Chocolate Chip Cookies


I don't know about you, but one of my simplest pleasures in life is enjoying a freshly baked chocolate chip cookie. The crispy edges, soft centers, melted chocolate chips...such goodness! I'm known for my delicious chocolate chip cookies amongst my family and friends and found this new recipe that I wanted to share. It's all the wonderful things that a classic chocolate chip cookie should be minus the dairy (YAY!). I make half of this recipe typically. If I make the full recipe I like to scoop half of the cookie dough into little balls and freeze them for later (Hello, late night cookie craving!). I hope you will try this recipe and enjoy a sweet treat with the ones you love!


Chocolate Chip Cookies (Dairy Free)

Makes 24 cookies

Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup vegetable shortening*
3/4 cup dark brown sugar
3/4 cup sugar
2 eggs
1 teaspoon vanilla
1 cup dairy free chocolate chips*

Directions
1. Preheat oven to 350F and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
3. In the bowl of a stand mixer, beat shortening and sugars at medium speed until light and fluffy (about 2 minutes). Add eggs and vanilla, beating until combined. Add flour mixture, about 1/2 cup at a time, mixing until incorporated, scraping sides as needed.
4. Stir in chocolate chips
5. Using a medium sized cookie scoop, drop 2 tablespoon balls of dough onto cookie sheet.
6. Bake for 10-11 minutes.*
7. Remove from oven and allow cookies to cool on the baking sheet for about 5 minutes before transferring to a cooling rack.

Notes:
Vegetable Shortening- I like to use Crisco Baking Sticks
Chocolate Chips- I like to use Enjoy! Brand Chocolate Chunks
Baking Time- My oven is a little finicky! I bake my cookies for about 14-15 minutes.
